Baked Broccoli and Cauliflower – Cara-Michele’s Kitchen

So I had some leftover broccoli and cauliflower. And in my house this means roasted veggies! I used coconut milk and coconut oil to coat the veggies and then generously sprinkled some Salute 21 seasoning from Trader Joe’s (or you can use the seasonings of your choice). Cover your baking dish with aluminum foil and bake at 325F for 15-20 minutes or until tender. At the end you can take the foil off (be careful, it will be hot!) and allow the veggies to brown a bit. Serve as a side dish or eat them on their own!
